Hi Fernando.
How the temperature sensor must be connected on arduino with screw shield?

The connection use 2 cables, but my sensor have 3 cables. yellow, red and black.

Check the images and notice that there 1 wire unconnected.
The wire colors for your sensor should be:
Red = VCC
Black = GND
Yellow = Data
Leave the red wire unconnected.
